Our Favorite Recipes

Spinach Casserole

4 cups shredded sharp cheddar cheese
1 (24 oz.) small curd cottage cheese
3 (10 oz.) packages frozen chopped spinach
10 strips bacon, cooked crisp
1 stick butter
6 eggs, beaten until smooth
5 tbsp flour
2 tsp salt
1/8 tsp pepper
1 tbsp lemon juice

Thaw spinach. Drain and squeeze liquid out of spinach. Cut butter into chunks.
Add shredded cheese, cottage cheese, butter, eggs, flour, salt, pepper, and lemon juice to spinach in a large bowl. Mix well.
Put into a greased 9 x 13 pan. Bake at 325 degrees for 45 minutes. Sprinkle bacon on top and back for 5 more minutes.

Potato Soup

2 to 3 slices bacon
3 medium potatoes, peeled and cubed
2 stalks celery, chopped
2 medium carrots, diced
1 small onion, chopped
1 tsp salt
1/8 tsp pepper
1 cup water
2 tbsp flour
2 cups milk

In large saucepan, fry bacon until crisp; drain on paper towel. Add potatoes, celery, carrots, onion, salt, pepper and water to drippings. Cook covered about 15 minutes or until tender.
In a bowl, combine flour with small amount of milk until smooth. Add to potato mixture along with remaining milk.
Cook over medium heat until mixture boils. Garnish with crumbled bacon.

Crock Pot Hot Chocolate

1 1/2 cup whipping cream
1 (14 oz.) can sweetened condensed milk
6 cups milk
1 cup milk chocolate chips
1 cup semi-sweet chips
1 tsp vanilla

Stir all ingredients together in a crock pot. Cook on LOW for 2 hours, stirring occasionally, until hot and melted. Stir before serving.
